Chris Bober’s Simple Salsa

August & September are great months if you have a home garden. Peppers are abundant and those green tomatoes turn red quickly.  You probably have an abundance of vegetables and need to use them quickly.  Here is a quick and simple recipe to create delicious salsa that can last for a while.

Ingredients:

• 6-10 medium or large tomatoes (I prefer Roma’s)
• 1 Fresh whole Jalapeno Pepper
• 1 Large Red Onion
• 2-3 ears of Garlic
• 1-2 Large Anaheim Peppers
• Killer Hogs AP Rub (Salt, Pepper, Garlic)

Directions

  1. Wash all vegetables and remove core from Tomatoes
  2. Place all vegetables on a baking sheet (Cut onion in half)
  3. Roast vegetables on “Broil” setting for about 20 minutes (flip after 10 minutes)
  4. When skins are charred, remove and let cool for about 10 minutes
  5. Peel & discard skin from each tomatoes and put in blender
  6. Put roasted onion halves & garlic into a lender
  7. Pulse all ingredients in the blender until your desired consistency
  8. Flavor with Killer Hogs AP Rub (Garlic Powder, Salt, & Pepper) to your liking

You can eat Chris Bober’s Simple Salsa while it is still warm (it is actually pretty good warm) or store it in the fridge for about a week.  If you find yourself making too much to eat or give away you can use the canning process to store for later months.
