Double Smoked Cran-Peño Ham
One of my favorite meals is Easter Ham. All store bought Ham is already smoked, but I found that double smoking a ham doubles the flavor. I also like to add my own special glaze. This recipe is so simple and easy you will wonder why you ever ate the your previous boring Ham. Give it a try and I promise you will be double smoking your Ham every holiday!
Ingredients:
• 10-12 lb. Spiral Cut Ham
• 1 small jar of Apple Jelly
• 1 small jar of Cran-Peño Preserves (or similar sweet/spicy mix)
Tools Needed:
•Your Favorite Smoker – Pit, Weber, Traeger, etc. (I used my Weber Kettle grill)
• Your Favorite Smoking Wood (I like Apple chips)
• Cooking Utensils, aluminum pan, basting brush & Aluminum Foil
Directions
- Unwrap your stope bought Ham and remove the plastic piece
- Wash the Ham and use a paper towel to dry the outside
- Place the Ham on a small metal rack to make it easier to handle
- Arrange several charcoal briquets and Apple wood chips off to one side of the grill forming an indirect heating zone
- Light one end of the charcoal and let the grill come up to about 250ºF
- Place an aluminum pan in the “indirect heat” zone under where the ham will sit
- Insert the grate and place the ham on the indirect side above the aluminum pan
- Place the lid on the grill and leave it alone
- Monitor the temp keeping it between 250-300ºF
- Empty the Apple Jelly & Cran-Peño (or smiliar) Preserves into a sauce pan over low heat
- Remove the Ham from the Grill and place it in a shallow aluminum pan
- Baste the Ham generously with all of the heated Jelly mixture
- Place the Basted Ham in the Aluminum pan back on the grill
- Open the vents and allow the glaze to set for about 30 minutes
- Remove the Ham and allow to cool slightly
- Once the Ham has cooled enough to handle, cut the meat from the bone and arrange on a platter for serving
- Enjoy with your favorite fixin’s
The Ham can be enjoyed right away. If you’re serving on another day you can reheat the Ham in the oven at 250ºF until the middle is warm. Be sure to save the drippings and re-baste the Ham while warming
